- 1.25 lbs flank steak
- 2 cups white rice, cooked
- 1 can (15 oz) pinto beans, drained
- 0.5 cup shredded cheddar cheese

- 2 tbsp vegetable oil
- 1 large green bell pepper, sliced
- 1 medium yellow onion, sliced
- 1 packet taco seasoning packet

- •1.25 lbs top sirloin steak, trimmed of fat
- •3 cups cauliflower rice
- •1 cup brown rice, cooked
- •1 can (15 oz) black beans, drained and rinsed
- •2 large bell peppers (red and green), sliced
- •1 medium yellow onion, sliced
- •2 tbsp fresh lime juice
- •1 tbsp chili powder
- •1 tsp cumin
- •0.5 tsp smoked paprika
- •3 cloves garlic cloves, minced
- •1 tbsp olive oil
- •0.25 cup plain nonfat Greek yogurt
- •2 tbsp fresh cilantro, chopped

Slice top sirloin against the grain into thin strips. Toss with chili powder, cumin, smoked paprika, minced garlic, and half the lime juice. Marinate 10 minutes at room temperature.

Heat olive oil in a large cast-iron skillet or grill pan over high heat until smoking. Sear steak strips 2-3 minutes per side for medium doneness. Remove to a plate and tent with foil.

In the same skillet, add sliced bell peppers and onion. Cook over medium-high heat 5-6 minutes until charred at the edges but still slightly crisp.

Pulse cauliflower rice in the microwave for 2 minutes or saute in a nonstick pan for 3-4 minutes. Mix with the cooked brown rice for a half-and-half base.
