Preheat oven to 425 F (220 C). Line two large baking sheets with parchment paper.

Peel sweet potatoes and cut into 1/4-inch sticks. Toss with olive oil, chili powder, and a pinch of salt. Spread in a single layer on one baking sheet.

Place sweet potato fries in the oven and bake for 15 minutes. Flip them and continue baking for another 10-12 minutes until crisp.

While fries bake, soak chicken tenderloins in buttermilk for 10 minutes. In a shallow dish, mix panko breadcrumbs, oat flour, smoked paprika, garlic powder, onion powder, salt, and pepper.
