Preheat oven to 375°F (190°C). Line a baking sheet with paper towels.

Slice zucchini lengthwise into 1/4-inch planks. Lay on paper towels, sprinkle with salt, and let sit 15 minutes to draw out moisture. Pat dry.

Heat a large skillet over medium-high heat. Cook ground turkey with diced onion and garlic, breaking it up, until browned (7-8 minutes). Season with Italian seasoning, salt, and pepper.

Stir marinara sauce into the turkey mixture and simmer 5 minutes.

In a bowl, combine ricotta, eggs, nutritional yeast, and a pinch of salt until smooth.
